Update on the bread: abject failure. It's over salted, and had other problems. It was intended to be a wet dough, but it was too wet to make a nice looking free-standing loaf. So I put it into a loaf pan. It rose nicely above the to of the loaf pan. I slashed the top twice, and everything was fine. When I pulled it out of the oven after baking it had collapsed down both sides of the pan and was perfecty flat and level with the top of the loaf pan.
